Eat and be Joyful!


Isn’t it lovely when good taste and good health are perfectly synchronized? This is a really easy vinaigrette that tastes fantastic on any green salad. Choose any leafy greens, such as lettuce, spinach, or arugula for your base. Pile on bell peppers, cucumbers, carrots, tomatoes… whatever you choose.  Then drizzle on the flavor, because this vinaigrette is not only delicious, but it is packed with healthy benefits.

The benefits of apple cider vinegar are well known and numerous, ranging from increasing the absorption of calcium and other minerals in the foods we eat, to lowering blood sugar, to aiding in digestion. Olive oil is rich in antioxidants and vitamin E, and is used extensively in Mediterranean cooking It is part of a heart healthy way of eating, and may also assist in the prevention of stroke. Honey is anti-bacterial, anti-fungal, is filled with anti-oxidants, and may prevent cellular damage to the brain, thus boosting memory. Who knew that eating deliciously could be so dang good for you?

Raspberry Vinaigrette

  • ¼ c. extra virgin olive oil
  • ¼ c. apple cider vinegar
  • 2 Tbsp. raspberry jam
  • 1 Tbsp. honey
  • Salt and Pepper to taste

Whisk the ingredients together, and taste. Too tangy? Add a little more olive oil, or honey. Not enough flavor? A few more drops of vinegar will perk it up. The amounts given are not written in stone. Each of us has a different sense of taste, and the idea here is to find the right combination of flavors for YOU!
